Tasty, crispy and with a pleasant surprise inside. These croquettes are ideal to enjoy as an aperitif or to enrich your starter. We have prepared them with an ingredient that cannot be missing from the autumn table: pumpkin. To give them a special touch, we have added an explosive ingredient, our Nduja cream. Ingredients


- cooked pumpkin pulp 400g
- breadcrumbs120g
- grated cheese 50g
- 1 egg
- black pepper to taste
- parsley to taste
- Nduja cream to taste 

To complete:
2 eggs and breadcrumbs for breading; seed oil for frying



Method


In a blender, add the pumpkin pulp, whole egg, breadcrumbs, cheese, spices to taste and a generous spoonful of Nduja Cream. When the mixture is blended, let it rest in the refrigerator for about 30 minutes.

After this time, form the croquettes with moistened hands, place them on a plate and dip them one at a time first in egg and then in breadcrumbs. Fry in hot oil until golden brown. Drain well on a plate with paper towels, season with salt and serve!

TIP:
you can replace the 'Nduja Cream with chopped chilli pepper.
