Grapes and Harvest
Colle Barabba is made with Arvino, Greco Nero, Magliocco Canino, Nerello Cappuccio grapes, harvested at an altitude of 450-500 metres. The grapes are harvested towards the beginning of October, after a careful manual selection made by our expert harvesters, they are softly pressed and left to ferment in horizontal macerators at a controlled temperature for a period of time ranging from eight to ten days. The maceration includes both pumping over and punching down for an accurate extraction of the noble components of the grape. After bottling, it rests for ninety days in the bottle.
