Zucchine alla pizzaiola - Valle del Crati

Zucchini alla pizzaiola is a very special side dish... so quick and easy that you can make them right now, just by dirtying a frying pan! 

Ingredients for two

· 4 medium-sized courgettes

· One poached garlic clove

· Salt to taste

· EVO oil

· Half a bottle of Pomodorossa

· Plenty of fresh basil

· One tablespoon grated Parmesan cheese

· Some crumbled mozzarella or feta cheese (for a veg version add vegetable cheese) 


In a frying pan, heat a little oil together with the garlic; as soon as they start to sizzle, add the sliced courgettes.

We add salt and sauté for a few minutes on a high flame. 

We then pour in the passata. Add another pinch of salt and cover.

Let them cook until the courgettes are soft. We then turn off the flame and crumble the mozzarella. 

Cover again with the lid and allow the cheese to become soft with the heat of the courgettes.

Finally, we sprinkle grated Parmesan cheese over the top.

Add lots of fresh basil, a dash of raw evo oil and enjoy.
