Summer is the best time to enjoy bruschetta bread
because it is a quick and easy meal to prepare! If you are looking for an
alternative to the usual tomato bruschetta then you are in the right place.
Today, we offer you a really tasty recipe, where the tomatoes are present but
in cream form and combined with crispy marinated courgettes! You will be amazed
by this combination, try them again immediately, they are so easy.
Serves 4 bruschettas:

4 slices of wholemeal bread
·
Dried tomato cream
·
A tender courgette
·
Matured flaked cheese (omit for a veg
version)
·
EVO oil
·
Pepper to taste
·
Two tablespoons of apple vinegar
·
Salt to taste
·
Dried tomatoes
·
Basil leaves for garnish
Cut the bread into thick slices and toast it.
Once crispy, spread a generous amount of dried tomato
cream on the surface of each slice. Separately, prepare the marinated
courgettes:
Simply cut into thin rounds and season with one
tablespoon of oil, two of vinegar, a pinch of salt and a grinding of pepper.
Mix them well and transfer them to the bruschetta. Cut shavings from your
favourite seasoned cheese (parmesan will also do) and add them. Garnish with a
few chopped dried tomatoes and a basil leaf. Ready to enjoy with friends or
during a lunch break or light dinner!
