A fluffy cake with simple, wholesome ingredients,
perfect for breakfast or a snack.
Preparing this recipe is really easy, just get a bowl
and a fork and start mixing!
The addition of Peasant style Figs together with
walnuts gives this cake a very special flavour and crunchy effect.
Ingredients

250 g 00 flour
·
150 g sugar
·
130 g organic extra virgin olive oil (or
seed oil)
·
3 large eggs
·
10 walnut kernels
·
10 Peasant-style Figs
·
50 g corn starch
·
70 g milk (or vegetable drink)
·
1 sachet of baking powder
·
Grated zest of 1 lemon
· 1 pinch of salt
Method
Chop the walnuts and Peasant style Figs with a knife
and keep aside.
In a bowl, break the eggs, add the sugar and mix until
light and fluffy. Now add the grated lemon zest, oil and milk and a pinch of
salt, continuing to mix.
Add the flour, sifted starch and baking powder and
when the mixture is well blended, add the walnuts and previously cut figs.
Grease a 24x19 rectangular baking tin or a 24 cm round
baking tin and pour in the mixture.
Bake in a preheated, static oven at 170° for about 40
minutes, always test with a toothpick.
