Caciocavallo is a stretched curd cheese characterized by a semi-hard, straw-yellow dough. Its compact texture, slightly eyed, is rather homogeneous. On the outside, the dough is protected by a smooth and thin crust which initially has the same straw-yellow color as the dough, but which takes on a yellowish-brown color as it matures or is smoked. On the nose, this cheese has a delicate aromatic intensity which becomes slightly more marked with age. Its flavor is intense, sweet and melting when fresh until it reaches light notes of spiciness as it ages.
Uses in the kitchen
Ideal as an appetizer or in combination with other typical products of Calabrian cuisine, grated on pasta for those who prefer an intense flavour. Delicious if tasted with our Onion or Chili Pepper Jam, Extra Fig Jam or Fig Molasses.
