Valle del Crati durum wheat semolina pasta is handcrafted by working only selected Italian grains; it is bronze drawn and dried at low temperatures, so as to maintain a high content of proteins and nutrients. The Long cottages they are a particular shape of pasta, which brings to mind its home-made origin: in fact, they are inspired by the busiata pasta , made with busi, or knitting needles. In shape, with the typical inward curvature, they are very reminiscent of parchment rolls: and it is precisely the shape that makes this pasta suitable for accompanying even less full-bodied sauces, despite its smooth surface.
Uses in the kitchen
Caserecce go perfectly with both traditional sauces and with the simpler and more delicious ones, based on ingredients such as aubergines, ricotta, cherry tomatoes and whatever creativity inspires.
Tips for perfect cooking
- Use 6 liters of water for 500 g
- Add salt and when the water boils, add the pasta.
- Stir occasionally.
- When cooked, drain and season as desired.
- Cooking time: 10-12 mins.
