The peasant side dish is a typical recipe from the
Calabrian peasant tradition, a dish that our grandparents used to prepare in
the morning and keep warm, to enjoy after a hard day's work in the fields!
To prepare it, they used the vegetables available in
the garden, flavoured with spices such as oregano, basil and chilli pepper.

Ingredients for two

Yellow, red and green peppers

1 onion
·
1 clove of garlic
·
Salt to taste
·
spices to taste
·
Olive oil
·
Arraganate black olives
Method
Thinly slice all the vegetables and place them in a
baking dish with olive oil, garlic, salt and spices to taste (black pepper,
oregano, thyme, rosemary); then add the Arraganate black olives and mix well to
combine everything.
Bake in a hot oven at 200° for about 40 minutes.
Finish with fresh basil.
Tip: Accompany this side dish with whole-grain bread
or freselle for an exceptional rustic flavour!
