Linguine al Pomodorito con quenelle di scampi - Valle del Crati

A first course rich in flavour, this is a perfect recipe, the simplicity of its ingredients being the key feature. The delicate flavour of aubergines goes perfectly with the strong taste of scampi. Giving an extra kick to this delicious dish is the Pomodorito, a condiment that will add flavour and cheer to your lunch! 

Ingredients for 2 persons

· 1 aubergine

· 1 jar of Pomodorito

· 1 garlic clove

· 4 large scampi

· 20 g pistachios

· 250 g linguine

· salt and oil to taste 


Wash and cut the aubergine into small cubes, fry it in oil and salt.

Clean the scampi and marinate them in oil and salt for an hour, then cut with a knife.

Cook the pasta in plenty of salted water, drain it al dente and season with the Pomodorito cream

With the help of a pasta cup, form a bed of aubergines, lay the nest of linguine and form a quenelle of scampi.

Sprinkle with freshly chopped pistachios.
