Ingredients for 2 people:
1 jar tomato
1 clove garlic
4 large scampi
20 g pistachios
salt and oil to taste
Wash and cut the eggplant into small cubes, fry in oil and salt.
Clean the scampi and marinate them in oil and salt for an hour, then cut with a knife.
Cook the pasta in plenty of salted water, drain it al dente and dress it with the tomato.
With the help of a pasta bowl form a bed of aubergines, place the nest of linguine and form a quenelle of scampi.
Sprinkle with freshly chopped pistachios.
